Ripe bananas matter
- More brown spots = sweeter, more aromatic loaf
- If they’re not ripe, bake them 10–15 min at 300°F to soften and sweeten
Mixing rule
Mix wet + dry just until combined. Lumps are fine.
Done-ness
- Toothpick: a few moist crumbs is good
- If it’s wet batter, bake longer
- Cool before slicing so it sets
