Ripe bananas matter

  • More brown spots = sweeter, more aromatic loaf
  • If they’re not ripe, bake them 10–15 min at 300°F to soften and sweeten

Mixing rule

Mix wet + dry just until combined. Lumps are fine.

Done-ness

  • Toothpick: a few moist crumbs is good
  • If it’s wet batter, bake longer
  • Cool before slicing so it sets
