One habit that makes sauces cling and taste glossy: save pasta water and use it to emulsify.

Starchy water helps emulsify oil + cheese into a glossy sauce instead of a greasy split.
Do this
- Salt the water like the sea
- Save 1 cup before draining
- Add a splash while tossing pasta + sauce
Don’t
- Rinse pasta (kills starch)
- Drain too early (al dente matters)
